Mixed Berry Coffee Cake

Brown Sugar Crumble

  • 2 ½ cups brown sugar
  • ¾ cup cold cubed butter
  • ¼ cup flour
  • 1 Tbsp cinnamon

Brown Sugar Crumble

In a food processor, combine sugar, butter, flour, and cinnamon. Mix thoroughly until the look and feel resembles wet sand. Set aside.

Coffee Cake

  1. Preheat oven to 325℉.
  2. In a bowl mix together flour, baking powder, baking soda, and salt.
  3. In a separate bowl, cream together butter and sugar until smooth.
  4. Mix in eggs slowly and until thoroughly blended.
  5. Add in extract and mix completely, but do not over mix.
  6. Combine dry and wet ingredients.
  7. Mix in sour cream.
  8. Fold in berries.
  9. In a lined or greased pan, spread out half of the batter, then top with half of brown sugar crumble. Layer in the remainder of batter and top with the rest of the crumble.
  10. Bake for an hour, or until the top is browned. Cake is ready when inserted toothpick comes out clean.
