Cherry Almond Galette

Amoretti Cherry Almond Galette

These galettes pair well with ice cream, a perfect finish to summertime meals.

Amoretti ingredients feature extraordinary flavor and top-quality freshness!

Directions

    1. Almond Cream: In a food processor, combine powdered sugar, Amoretti Blanched Almond Flour and cornstarch. Mix for about 30 seconds.
    2. Pour mixture into a mixing bowl, add room temperature butter, and cream together, scraping bowl.
    3. Add egg, Amoretti Almond Extract and Amoretti Amaretto di Amoretti Liqueur Flambe. Mix to combine, about 2 minutes.
    4. Almond Cream can be chilled and kept for one week.
    5. Pie Dough: Combine all dry ingredients.
    6. Add cold, cubed butter.
    7. Mix until pea-sized crumbs form.
    8. Add ice water and mix until dough comes together.
    9. Wrap in plastic, and chill 1 hour.
    10. Cherry Filling: Combine sliced and pitted cherries, sugar, Amoretti Black Cherry Compound and Amoretti Kirsch Compound. Stir to combine.
    11. Assembly of the Galette: Roll out dough circles to desired size. Egg wash outside edges, both sides.
    12. Pipe small amount of almond cream into the center.
    13. Top with cherry filling.
    14. Fold over edges of dough and crimp.
    15. Brush with egg wash and sprinkle raw sugar over the top.
    16. Bake at 400°F for 30-40 minutes

Directions

    1. Whisk cornstarch, sugar, cocoa and salt together in a saucepan.
    2. Add cold milk and cream, stir together.
    3. Over medium heat, bring mixture to a boil. Reduce to simmer, stirring constantly, and cook for 2-3 minutes until mixture thickens.
    4. Remove from heat, add butter and vanilla, stirring to combine.
    5. Pour into bowls or glasses, cover with plastic touching top of pudding to keep a skin from forming. Chill for an hour. Top with whipped cream, and enjoy!
