Healthier meatloaf dinner

Try our healthier version of a classic comfort food dinner.

 Lower-Carb Lower-Fat Meatloaf

Sauté the onion, bell pepper, and celery in 2 Tbs of olive oil until the onions are translucent. Add the tomato sauce, garlic oil extract and oregano oil extract. Simmer on low heat for 30 minutes, then allow to cool.

Preheat your oven to 375°F.

Whisk the egg and egg substitute in a large bowl. Add the ground beef, ground turkey breast, and oats to the eggs and mix thoroughly. Add the sauce and combine with the meat mixture. Pat mixture into a loaf pan, invert the loaf pan onto a broiler pan and remove the loaf pan. Bake the meat loaf in a 375°F oven for 1 hour. Makes 8 servings.


 Garlic Mashed Potatoes

Place the potatoes in a large pot and add enough water to cover them by 2 inches. Boil the potatoes for about 15 minutes, until a paring knife inserted into a potato meets no resistance. Drain the potatoes, then squeeze them through a potato ricer into a bowl, discarding the skin.

Add the garlic, Parmigiano or Romano cheese, Amoretti® Olive Oil, and vegetable broth to the potatoes and stir until combined. Season with salt and pepper to taste.


 Green Beans Almandine

Place the potatoes in a large pot and add enough water to cover them by 2 inches. Boil the potatoes for about 15 minutes, until a paring knife inserted into a potato meets no resistance. Drain the potatoes, then squeeze them through a potato ricer into a bowl, discarding the skin.

Add the garlic, Parmigiano or Romano cheese, Amoretti® Olive Oil, and vegetable broth to the potatoes and stir until combined. Season with salt and pepper to taste.
