Yes, here at the Amoretti test kitchens we just love making and sharing cheesecakes. When we say cheesecake, we are talking about a pie with a graham cracker crust and a creamy, egg-heavy, soft cheese filling, made in a springform pan. Regardless of whether it’s baked or not, whether it’s New York style, Philadelphia style, Chicago style, or country style, whether it’s sweet or savory, or whether it’s served plain, with a topping, with whipped cream, or with a topping and whipped cream, we at Amoretti just LOVE our cheesecake! And because we love our cheesecake, we want to share this love of cheesecake with you.

You may be asking yourself, “Self, why we are those Amoretti people so enthused about cheesecake?” The answer is, we have so many products that can be added to a basic cheesecake crust and/or filling to personalize it. We have 6 extracts, we have 10 Natural Artisan flavors, we have 7 different Organolicious Agave Nectars, and we have 118 different Premium Syrups and Sugar Free Flavorings that we can use to create an impressive cheesecake. Amoretti Natural Artisan Flavor is the most popular additive for creating memorable cheesecakes. Just add 3 to 4 Tablespoons of your favorite Natural Artisan flavor to the cheese filling of a 9-inch cheesecake to create a special dessert for that special someone, to impress dinner guests, or simply because you want to do something special for your family. Of course, for larger or smaller cheesecakes, adjust the amount of Natural Artisan Flavor accordingly.

Amoretti extracts can be used in either the cheesecake crust or the filling, or both, but they are much more concentrated than the Natural Artisan Flavor, so use them sparingly. Put in about half of the amount you’d expect to use and taste the result. Remember, you can always add more extract, but once it’s in there, you can’t remove it. If you do accidently add more extract than necessary, you can attempt to fix it by mixing up some more crust or filling without any flavoring and add it to your “over flavored” product a little at a time until the desired flavor level is reached. Then, in order not to waste the extra product, you’re going to have to make two cheesecakes instead of one. LUCKY YOU!

You have many more possibilities when flavoring your cheesecake filling with Amoretti Premium Syrups and Sugar Free Flavorings, and you can either match the flavor of the filling to the fruit topping you are going to use or mix and match the filling flavor with the topping flavor. When using Amoretti Premium Syrups or Sugar Free Flavorings to flavor your cheesecake filling, start with 50% more syrup than the amount of Artisan Flavor normally used, which would be 4½ to 6 tablespoons of syrup for a 9-inch cheesecake. Taste the results and adjust the amount of syrup accordingly. Again, remember that you can always add more flavoring, but once it’s in there you can’t remove it.

We’re experimenting with that recipe in the Amoretti test kitchens as we speak, but we aren’t going to release it until it is perfect. In the mean time, use your usual cheesecake recipe, or any cheesecake recipe you might find on the internet or get from a friend, add any of the Amoretti products as described above, and enjoy the praise you’re sure to receive from your family and friends.
