Amoretti Peppermint Candy
- 3 ¾ cups white sugar
- 1 ½ cups light corn syrup
- 1 cup water
- 1 tsp Amoretti Peppermint Oil Extract
- ¼ cup confectioner’s sugar
Add the white sugar, corn syrup, and water to a saucepan. Cook the admixture over medium heat until the sugar dissolves. Once the sugar has dissolved, bring the compound to a boil. Use a thermometer to monitor temperature (the ideal temperature here is 300+ ºF.) If you don’t have a thermometer, then you’ll know that you’ve reached a high enough temperature when you can drop a little syrup in cold water and see it harden.
At this point, remove the saucepan from the stove and add the flavored extract. Pour the mixture onto a greased cookie sheet and add a light dusting of confectioner’s sugar. Allow the peppermint candy to cool, then break it into bite-sized pieces and enjoy!
