Clementine Upside Down Cakes

      In order to make this recipe taste ultra delicious, try Amoretti’s citrus flavors.

    • 10-12 clementines (or mandarin oranges)
    • 2 sticks of butter, at room temperature
    • 1 cup caster sugar
    • 2 tablespoons Amoretti® Orange Syrup
    • 4 large eggs, at large room temperature
    • Zest of 2 clementines
    • 2 teaspoons Amoretti® Orange Zest Oil Extract
    • 1⅓ cups + 3 tablespoons all-purpose flour
    • 2 teaspoons baking powder
    • 1½ teaspoons brown sugar


    1. Preheat oven to 350°F.
    2. Spray and flour muffin tin.
    3. Peel and slice clementines (or mandarins) and set aside. You’ll need one slice per cake.
    4. Beat butter and sugar until light and fluffy.
    5. Add eggs one at a time, mixing and scraping bowl in between each egg.
    6. Add Amoretti Orange Syrup, Orange Zest Oil Extract, and zested clementine.
    7. Mix to combine.
    8. Sift flour and baking powder together, and fold into batter.
    9. Sprinkle a small amount of brown sugar into each muffin cup.
    10. Place one slice of clementine on top of sugar.
    11. Using an ice cream scoop, place one scoop batter into each muffin cup.
    12. Bake for 25-30 minutes, until golden brown.
    13. Set on rack to cool.
    14. Orange Syrup: Boil all ingredients on low, stirring until it begins to thicken.
    15. Turn cakes out onto a rack that is sitting on a sheet pan, to catch the dripping syrup.
    16. Pour the syrup over the cakes. Serve plain or add sweetened crème fraiche with some zested clementine added to it.
