Sure, you can make a cake or pie on the week-end and serve it all week, but here’s a quick, easy fruit dessert recipe that can be prepared right along with your meal, so it’s new and exciting rather than something everyone has already had several times this week, and it is healthier than your average cake or pie.
Pear Melba with Roman Raspberry Gelato
- 4 D’Anjou pears
- Juice of 1 lemon
- 1 cup superfine sugar
- 1½ cups water
- ½ tsp Amoretti® Madagascar Bourbon Vanilla (2 Fold) Extract
- 1 8oz container of fresh raspberries
- 1 pint Roman Raspberry gelato
- Mint leaves, to garnish
Peel, halve, and core pears. Rub with lemon juice to prevent discoloration. In a saucepan, stir sugar, vanilla extract and water over low heat until sugar dissolves. Add pears and poach for 8-10 minutes, until tender but still firm. Remover pears from poaching liquid, place two pear halves, cut side down, in each of 4 serving dishes and allow to cool.Put ½ cup poaching liquid with half the raspberries into a blender and purée until smooth. Pour purée into a bowl through a strainer, fold remaining berries into the strained purée, and chill.Add a scoop of the raspberry gelato to each serving of pears. Drizzle pears and gelato with raspberry sauce and garnish with mint.
